Stewed Figs with Honeyed Walnuts and Marscarpone
By Janet. 14 March 2017.

I love figs and thanks to my in-laws we have a lovely fig tree. However, living on a bush block, I have a lot of competition with eating the the figs - several different types of birds including 28s (parrots) and currawongs and also possums. Last year I didn’t even get 1 fig to eat as it was a poor crop and what figs formed didn’t even ripen. This year I have managed to eat a few - eating figs fresh from the tree is best. However, I didn’t check the tree for a few days and several of the figs were a bit too ripe. I decided to to cook them. I was given some oil flavoured with vanilla bean, almond oil and walnut oil to sample so I decided to use this in the recipe. For the best taste get a bit of everything on each spoonful. The figs and honey are sweet, the walnuts have crunch and the marscarpone cuts through the sweetness and offers creaminess.
