Anzac Biscuits
By Janet. 24 April 2017.

Anzac Day is a very important day to many Australians and New Zealanders. One of my Dad’s much older brothers fought in the first world war. My Mum was born on Anzac Day 1917 so she would be 100 tomorrow if she was still alive. For these reasons and because of what Anzac Day actually stands for, tomorrow will be a very special and thought provoking day. I couldn’t let the day pass without making some Anzac biscuits, something I have memories of Mum making. I decided to make the original recipe but also decided to make some variations so I hope this doesn’t upset the traditionalists. I had never made any variations before. The recipe is supposed to make 36 biscuits but I only made 27. Obviously I made them a bit bigger than I was supposed to but no-one is complaining.
