Vanilla Cake

Last weekend was my daughter’s 21st birthday and I made her cake. She asked for a vanilla cake and I couldn’t find a recipe I liked that was easy to make (I wanted an easy recipe because my time would be taken up with the icing) so I found a butter cake recipe that had vanilla essence in it but I also added vanilla bean. I have provided the recipe for one cake but the birthday cake was made from two 23cm cakes and one 11cm cake. Each cake was split in half and spread with lemon and lime curd (recipe available at http://everydaygourmet.tv/recipe/lemon-and-lime-curd/). The cakes were then iced with Swiss meringue buttercream and the covered with a galaxy mirror glaze and sprinkled with edible blue glitter. Painted white chocolate spheres were filled with either M&Ms or Skittles.

This cake design was inspired by Katherine Sabbath who I saw ice a cake at the Delish Expo 2018 in Perth earlier this year. Her cake did not use mirror glaze.
