Chocolate Cake

Different family members have a favourite baked item that I make. My oldest brother’s favourite is chocolate cake. One day, quite a few years ago he said to me that I wasn’t allowed in his house without a chocolate cake. Although said in jest, I suspect there was an element of truth in his statement and so, nearly every time I have visited, I have a chocolate cake in hand. I always enjoy cooking for those that appreciate it. And yes, the cake in this photo was taken to a family get together at my brother’s house. I have a few different chocolate cakes that I make but my favourite is one I cut from a Cadbury Bournville Cocoa packet at least 10 years ago, back when the packet was orange. It differs from the Cadbury Family Chocolate Cake they currently have on their website. This cake is quite dark looking but is always moist and has never failed. I have modified their chocolate ganache icing recipe. Ensure you use a large enough saucepan as the bicarbonate of soda causes it to froth up when heated. All notes in brackets are from my cooking experiences.
