Ingredients: 1 cup plain flour; 1 tablespoon cocoa (20ml size or 4 teaspoons); 1 teaspoon baking powder; 1/4 teaspoon bicarbonate of soda; 100g butter, softened; 1 cup caster sugar; 2 teaspoons Christmas red paste food colouring (see notes); 1 teaspoon vanilla extract; 1 egg; 1/2 cup buttermilk (see notes); 1 teaspoon white vinegar; 125g cream cheese, softened; 90g unsalted butter, softened; 1 teaspoon vanilla extreact; 1 1/2 cups icing sugar mixture, sifted

I had been looking at recipes for red velvet cupcakes with interest but not actually made them when my daughter made some in her hospitality class at school ( 4 years ago). After trying one, I knew I had to make some myself. More recently I had promised to make some more as they are a favourite of my daughter and after this batch, they are now a favourite of my youngest son. This recipe is a combination of a recipe I found in a magazine and Nigella Lawson’s recipe. I made cupcake sized cakes this time, but on request I will be doubling the recipe and making muffin sized cupcakes next time. If you make bigger red velvet cupcakes, remember to increase the cooking time.
