Slow Cooked Beef Casserole

Winter is a great time for a hearty casserole. I cooked this one on the stove top but sometimes I cook it in the slow cooker, it just depends how early I get organised. My slow cooker only has one setting - low, so it takes eight hours to cook. When you make casseroles, always make twice as much as you need and freeze half for another night. My 18 year old son loves casseroles and will always eat a lot at dinner and then eat any leftovers for lunch the next day so I have to make a lot. I serve mine with mashed potato but you could serve it with pasta, rice or cous cous or some crusty bread to mop up the gravy. The recipe shown does my family twice (4 adults) with some leftovers for my son! I use a casserole dish that can go on the cook top so I only use one pot. If you don’t have one, use a big saucepan or cook in the oven at 150°C/130°C. The gravy won’t thicken as well in the oven.
