Strawberry Jam (Served on Scones with Cream)

Strawberry Jam

1. 1Combine strawberries, sugar and juice in a saucepan over low heat. Stir until sugar is dissolved. Increase heat to high and boil rapidly for 20 minutes, stirring occasionally, or until setting point is reached (see notes).
2. 2Skim off any 'frothy scum' from the top of jam.
3. 3Ladle jam into sterilised jars (see notes).
4. 4Seal.

Scones

1. 5Preheat oven to 220 degrees C/200 deg C fan forced.
2. 6Mix all the ingredients together.
3. 7Roll out and cut with scone cutter dipped in flour (can use a glass dipped in flour).
4. 8Place scones close together, but not touching, on a tray lined with baking paper.
5. 9Bake for about 12 minutes.
6. 10Cut scones in half and top with homemade strawberry jam and whipped cream.
