Chicken Tostadas with Corn and Avocado
By Janet. 2 May 2017.

This recipe is so tasty. The inspiration for these came from the chicken tostadas made by Dani Venn in season 3 of MasterChef Australia. Her tostadas won the best dish for that part of the competition. I have simplified her recipe by using shop bought mayonnaise instead of making my own. I am yet to make my own mayonnaise but it is on my to-do list. I have also made a few other tweaks to her recipe, including the omission of coriander and mint in the avocado mash as my family members are not fans of raw coriander but feel free to add it if you like it. We really like the freshness and zinginess of lime in the avocado and I think coriander would detract from this but this is just my opinion. I know some people love coriander. I usually make these tostadas when we have a mini Mexican/Cajun feast where I also make chilli con carne, Cajun chicken and Mexican rice. However they are great to eat on their own. I used to make them by cutting rings from the tortillas but this led to a lot of wastage and they didn’t need to look so pretty just for the family (I’m not competing in a cooking competition) so now I just cut the tortilla into 4. They can be a bit messy to eat but they are so delicious you will want to keep eating them. I’m sure you will love them as much as we do.
