Luscious Fried Chicken or LFC for short
By Janet. 18 July 2017.

This is an absolute family favourite. We refer to it as LFC, the L being the first letter of our surname. I was wondering what to call this recipe for the blog and my husband said I should still call it LFC but with the L standing for luscious as, as he said, it is luscious. This is shallow fried chicken, as you can see in the photo, so it is not crispy all over like deep fried chicken, but it is always succulent and very tasty. Serve it with your choice of accompaniments - chips and salad (or just salad), mashed potatoes and vegetables, whatever you want - it is a winner all year round. Use thigh cutlets - cooking meat on the bone adds flavour and helps keep it juicy.
The night this picture was taken, my husband had 4 chicken cutlets, my son had 3 and my daughter and I had 2 each (I had the 2 smallest ones), so 12 cutlets doesn’t go very far. My son ate the one that was left over for lunch the next day.
The picture shows the chicken being cooked.
