Roast Chicken with Lemon Myrtle or Moroccan Seasoning

Whole chickens have been so cheap lately - twice in the last few weeks they have been $2.90/kg so we have been having roast chicken once or twice a week. Chicken is so versatile and you can use so many different herb and spice combinations to season it. I have a couple of favourites which I will share with you here. My husband’s absolute favourite is the roast chicken with lemon myrtle. I bought the lemon myrtle online with some other native products - wattle seeds and quandong jam. I was watching a cooking show the other day and the host was cooking with lemon myrtle but advised that you could substitute finely grated lemon rind. If lemon is not to your taste, try the Moroccan seasoning. Lemon myrtle has such a strong beautiful lemon fragrance and I intend to use it in a lot more recipes.

More often than not I butterfly the chicken before roasting. With a good set of kitchen shears it is quite easy to remove the spine. I also cut off the wing tips. This greatly reduces the cooking time and you have some bones to make a jus to go with the roast or freeze for later and make your own stock and/or soup.
