Roast Lamb

Method

Tap a step when it's done.

1. 1Preheat oven to 200 deg C/180 deg C fan forced.
2. 2Using a small, sharp knife, make incisions all over lamb. Place a slice of garlic and a sprig of rosemary in each incision. Place lamb in a baking dish.
3. 3Mix remaining ingredients in a bowl. Pour mixture all over lamb and massage in with hands so every bit of lamb is covered.
4. 4Bake 20 mins. Reduce oven heat to 160 deg C/140 deg C fan forced and cook for about 1 hour fifteen minutes or cooked to your liking.
5. 5Cover with foil and rest before carving.
6. 6Serve with gravy (although lamb should be so succulent you only need the gravy on the vegetables) and your choice of vegetables. Last night we had roast potatoes, honeyed carrots and peas.
